Buri no Teriyaki (Teriyaki Yellowtail)

Buri no Teriyaki is a classic Japanese dish featuring succulent yellowtail steaks glazed with a sweet and savory soy sauce-based marinade. It’s a flavorful and satisfying meal that’s perfect for a quick weeknight dinner or a special occasion.

Ingredients

  • 2 yellowtail steaks (about 6 ounces each)
  • For the marinade:
    • 1/4 cup soy sauce
    • 1/4 cup mirin
    • 2 tablespoons sake
    • 1 tablespoon brown sugar
    • 1 tablespoon grated ginger
    • 1 clove garlic, minced
  • Vegetable oil for cooking
  • Sesame seeds for garnish (optional)

Instructions

  1. Prepare the Marinade:
In a small bowl, whisk together the soy sauce, mirin, sake, brown sugar, ginger, and garlic. Place the yellowtail steaks in a shallow dish or resealable bag. Pour the marinade over the steaks, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours, for maximum flavor penetration.
  2. Cook the Yellowtail:
Heat a large skillet or grill pan over medium-high heat. Add a drizzle of vegetable oil to the pan. Remove the yellowtail steaks from the marinade, reserving the marinade. Sear the steaks for 2-3 minutes per side, or until golden brown and cooked through.
  3. Glaze and Garnish:
Reduce the heat to medium. Pour the reserved marinade into the pan and bring it to a simmer. Baste the steaks with the glaze for about 1 minute per side, allowing the glaze to thicken slightly. Transfer the glazed yellowtail steaks to serving plates. Sprinkle with sesame seeds, if desired.
  4. Serve and Enjoy:
Serve the Buri no Teriyaki hot with steamed rice, stir-fried vegetables, or your favorite side dishes. Drizzle with any remaining glaze from the pan for extra flavor.

Tips

  • For a richer flavor, marinate the yellowtail steaks overnight in the refrigerator.
  • If you don’t have mirin, you can substitute with 1 tablespoon of honey and 1 tablespoon of rice vinegar.
  • Use a meat thermometer to ensure the yellowtail steaks are cooked to an internal temperature of 145°F (63°C) for safety.
  • Adjust the amount of brown sugar in the marinade to your taste preference.
  • Garnish with chopped scallions or cilantro for added freshness.
