Ingredients (for 2 servings)

  • 2 packages instant ramen noodles
  • 2 cups chicken broth
  • 1/2 onion, thinly sliced
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 slices cooked bacon, chopped
  • 2 soft-boiled eggs, halved
  • Sliced green onions, for garnish

Instructions

  1. Cook the ramen noodles according to package directions.
  2. While the noodles are cooking, heat the chicken broth in a pot over medium heat.
  3. Add the onion, garlic, soy sauce, sesame oil, ginger, and red pepper flakes (if using) to the pot and cook until the onion is softened, about 5 minutes.
  4. Divide the cooked noodles between two bowls.
  5. Ladle the broth and vegetables over the noodles.
  6. Top with bacon, eggs, and green onions.

  • Add other toppings of your choice, such as shredded carrots, mushrooms, or kimchi.
