Soba(Zaru-soba)

Soba is buckwheat noodles, beloved in Japanese cuisine for their unique flavor and versatility.

Ingredients (for 2 servings)

  • 2 packages of buckwheat noodles (dried or frozen)
  • For the dipping sauce:
    • 1/2 cup (120ml) dashi broth (Japanese soup stock)
    • 2 tablespoons soy sauce
    • 1 tablespoon mirin (Japanese sweet rice wine)
    • 1 tablespoon sake (Japanese rice wine)
    • 1 teaspoon grated ginger
    • 1/2 teaspoon wasabi (optional)
  • Toppings:
    • Grated nori (seaweed)
    • Chopped scallions
    • Wasabi (optional)
    • Shichimi togarashi (Japanese seven-spice chili pepper mix) (optional)

Instructions

  1. Prepare the dipping sauce: In a small bowl, combine the dashi broth, soy sauce, mirin, sake, grated ginger, and wasabi (if using). Stir well and set aside.
  2. Cook the buckwheat noodles: Follow the package instructions for cooking the buckwheat noodles. If using dried noodles, bring a large pot of water to a boil. Add the noodles and cook for 3-5 minutes, or until al dente. Drain the noodles and rinse them under cold running water to stop the cooking process. If using frozen noodles, cook them according to package directions.
  3. Prepare the toppings: Chop the scallions and set them aside. Grate the nori and set it aside.
  4. Assemble the Zaru Soba: Divide the cooked buckwheat noodles into two serving bowls. Place the dipping sauce in a small bowl or dish. Arrange the toppings (grated nori, chopped scallions, wasabi, and shichimi togarashi, if using) on small plates or bowls.
  5. Serve: Dip the buckwheat noodles into the dipping sauce and enjoy with your chosen toppings.

Tips

  • For a more flavorful dipping sauce, let it sit for at least 30 minutes before serving.
  • If you don’t have dashi broth, you can substitute 1 cup (240ml) of water and 1 teaspoon of dashi powder.
  • To make the Zaru Soba even more refreshing, chill the noodles and dipping sauce before serving.
  • Get creative with your toppings! You can also add other toppings such as grated daikon radish, pickled ginger, or sesame seeds.
